Broiled Shrimp & Rice Stuffed Tomatoes Topped w/Crumbled Goat Cheese

Ready for an easy gourmet dinner?  Most of the ingredients are ready to be picked up at your local farmers market and your taste buds will thank you for treating them to the freshest, best quality food available and usually you will even save a few bucks!!

So here is your grocery list:

1 LB Wild Caught shrimp peeled and deveined

6-8 cloves of fresh garlic finely minced

2 cups of your favorite prepared rice

1/2 of a red onion finely diced

1/2 cup finely diced green pepper

10 whole Roma tomatoes sliced in half long way and insides discarded

2-3 big handfuls of fresh spinach, cleaned and large stems removed

Extra Virgin Olive Oil

6 oz of fresh goat cheese

Sea Salt, Black Pepper, a pinch of Red Pepper Flakes and Dried Oregano

Preheat your oven to 400 degrees.  Spray a glass baking dish with non stick olive oil and line with your tomatoes cut side up, season them and place them in the oven for 10-15 minutes.  Carefully drain juice from inside tomatoes without any breakage.  Meanwhile heat a large skillet to medium and saute in olive oil your red pepper flakes, garlic, onion, green peppers, sea salt, black pepper, oregano and lastly your shrimp.  Once the shrimp is nearly done, add your spinach and when it wilts stir in your cooked rice.

Set your oven to Hi Broil.  Carefully spoon your filling in to each of the tomato halves, not to worry if you spill over.  Once the filling is completely used crumble by hand all of your goat cheese so that it evenly covers the entire dish.  Then just broil until slightly melted and nicely browned on the top.  Grab a spatula and a spoon for balancing, load up some plates  and make some people very happy!!!
